My friend Denise got this recipe from her step-mother. It's a huge hit in her family. I've tried it several times and it's WONDERFUL!! I've been asking for the recipe for years. I finally got it! ;o) I know what we'll be having this weekend. Hope you enjoy it as much as we do. MissM D's White Chili Ingredients: 3 cans (16 oz each) Great Northern white beans 6 Chicken breasts - cooked 1 Tblsp olive oil 2 med onions chopped 4 garlic cloves, minced 2 cans (4 oz each) chopped mild green chilies 2 tsp ground cumin 1 1/2 tsp dried oregano, crumbled 1/4 tsp cayenne pepper 6 cups chicken stock or canned broth 3 cups grated Monterey Jack Cheese (approx 12 oz) sour cream Directions: Place chicken in heavy large saucepan. Add cold water to cover and bring to simmer. Cook until just tender, about 15 minutes. Drain and cool. Remove skin. Cut chicken into cubes. Heat oil in same pot over medium-high heat. Add onions and saute until translucent, about 10 minutes. Stir in garlic, then chilies, cumin, oregano, and cayenne - saute an additional 2 minutes. Add undrained beans and stock. Bring to boil. Reduce heat and add chicken and chesse to chili and stir until cheese melts. Season to taste with salt and pepper. Ladle chili into bowls. Garnish with sour cream if desired. |
