The beauty of breakfast burritos is that you can change them to suit your likes and dislikes. Personally I like sausage more than bacon in my burritos. I'd also add some fresh, sliced mushrooms. Sometimes I'll substitute leftover rice for the potatoes, too. This is one of the breakfasts I make regularly, although this particular recipe is from That's My Home.

Breakfast Burritos
1 T. butter
1 medium potato, finely diced
1 green bell pepper, seeded and finely diced
4 slices bacon, cooked and crumbled
8 eggs, lightly beaten
Salt and freshly ground pepper to taste
4 flour tortillas warmed
4 oz. cheddar cheese, shredded
1/2 C. Mexican-style salsa
2 scallions, finely chopped
Melt the butter in a skillet over moderate heat and saute the potato and pepper until tender, about 5 minutes. Add the bacon and eggs and cook, stirring frequently, until set. Divide the egg mixture between the tortillas and top with the cheese, salsa, and scallions. Roll up, tucking the ends under.
Serves 4.
