My Dad was diagnosed with Type 2 Diabetes a few years ago and he's really changed his eating habits because of it. He was already kind of watching what he ate... but now he's really careful. Within 6 months to a year of being diagnosed he lost about 40 pounds. He started exercising regularly and really being careful of what he ate, and it was all with the Doctor's approval, but still, I was very impressed!
This recipe is one that he got out of one of his Diabetic cookbooks... Sorry, I'm not sure which cookbook!! It's really good, even if you're not into Carrot Salads (Like me!!)

Lime-scented Carrot and Cumin Salad
2 teaspoons cumin seeds
3 tablespoons extra-virgin olive oil
1 lime, grated zest and juiced
salt/pepper
3-4 large carrots, peeled and finely grated (about 1 1/2 pounds)
1 red onion, peeled and thinly sliced into rings
1 tablespoon fresh cilantro leaves, chopped
Fry cumin seeds in a small pan until they begin to release their aroma.
Be careful as they can jump out of the pan when the get got.
Set aside.
Wisk together the olive oil, lime juice and zest, salt and pepper.
Put the carrots and onions into a salad bowl, toss with the dressing,
then stir in the toasted cumin seeds and chopped cilantro, garnish with
more of the chopped cilantro.
