Yummmmmm! This is my mother's recipe, and one of my all time faves!
I've never tried to make it myself... Mom is usually willing to do it for me if I ask nicely ;o)
I have watched mom make this a few times and it's MESSY!!! But it's worth it!

Mock Abalone Feeds 8-10
3 whole (or 6 split) chicken Breasts BONELESS - Pounded well and cut into pieces
1 bottle Clam juice- mixed w/ 1/2 cup milk
marinate chicken in clamjuice mixture over night
DO NOT DISCARD

prepare dredging dishes as follows!
1) the chicken in clam juice mixture
2) 1 c. flour, salt pepper 1 c.cracker or bread crumbs, 1/2 tsp garlic powder, 1/2 tsp parsley flakes
3)3-4 eggs-mixed very well w/ 1/2 c milk
4) 1 1/2 c plain flour
Spray pan w/ nonstick then heat 1/2 c veg or light olive oil, when hot place pcs. in so there is room around them. it will take a few batches to get them all cooked so be sure to clean the pan out and use fresh oil for each batch or you will get a bitter scorched taste to the later batches the pounding has broken up the sineuw in the chicken and it will be done as soon as it is golden brown.
DO NOT OVERCOOK!
