Pasta Salad

My daughter hates vinegar... even the smell of it gets her upset. She's been like that since she was about 4 years old. She's now 17.

I LOVE pasta salad... but most recipes call for vinegar, so I had to come up with some other form of pasta salad that we'd all eat. That's how this recipe came to be.

This is one of the simplest recipes, but we get raves on it whenever we take it anywhere!

Pasta Salad

2 small packages any kind of rainbow pasta, cooked and cooled
3/4 cup Ranch Dressing
1 small can sliced olives
5 - 10 grape or cherry tomatoes, cut in half
1/4 cup grated parmesan cheese
3 - 4 green onions, chopped (I use green and white parts)
1 tsp minced garlic
1 tsp Lemon Pepper

Combine all ingredients. Stir gently, but thoroughly. Add more Ranch Dressing if needed.
Serve chilled.


NOTE: After chilling the pasta salad you'll probably need to add a little more ranch dressing... otherwise it will be a little dry.

Thanks for visiting my blog! :) I do love Carol King. I wore out her Tapestry album when I was a teen ager. I didn't know that she was Leslie Gore's cousin until about 15 years ago! She wrote most of Leslie's songs, too! What a talented woman. This is one concert I would have loved to have seen in person. She has talent. There was a made for TV movie loosly adapted after her life about 10 years ago or so. I think I taped it. I am going to have to dig it out and watch it. "I Feel the Earth Move Under My Feet!" "You've got Friend"... Natural Woman.. oh so many of my favorites!
