Here is one of the recipes that Kay sent to CJCarrell for the TOH Cookie Swap. Enjoy! MissM Chocolate Chip Caramel Pecan Cookies 2 1/2 cup Flour 1 t Baking soda 1/2 tsp. Baking powder 1 t Salt 1 c Butter 1 c Sugar 1/2 c firmly packed brown sugar 2 Eggs 6 oz Chocolate chips 18 Caramels, such as Kraft, unwrapped and chopped coarsely. 1 c coarsely chopped pecans Preheat oven to 375.. Whisk dry ingredients all together in a bowl. - In another large bowl, using an electric mixer, cream together butter and sugars until fluffy. Beat in eggs one at a time. Then gradually add flour mixture, beating after each addition. - Stir in chocolate, caramels, and nuts into dough, till just mixed. - Drop rounded tablespoons full of dough about 2 inches apart onto non-stick baking sheets. - Bake 10 to 12 minutes, or until lightly golden. - Cool cookies on baking sheets until firm. Makes about 48 cookies. |
