Chocolate Wrapped Peppermint Cookies

MissM Sent to Patty by Evelyn Chocolate Wrapped Peppermint Cookies **These are so pretty! 1 1/2 c powdered sugar 1 c butter, softened 1 egg 2 3/4 c flour 1/2 t salt 1/4 c baking cocoa 1 T milk 1/3 c chocolate jimmies 1/4 t peppermint extract 4 drops red food coloring Combine powdered sugar, butter, egg; mix in flour and salt. Divide dough in 1/2; place each 1/2 in a separate mixing bowl. Add cocoa and milk to one 1/2; add jimmies, peppermint extract and food coloring to the remaining 1/2; mix well. Roll out chocolate dough into a 12 x 6 " rectangle on wax paper, set aside. Shape peppermint dough into a 12 " roll. Place to fit on chocolate dough rectangle. Wrap chocolate dough around peppermint dough, using wax paper. Seal seam. Keep dough wrapped in wax paper and refrigerate till firm, at least 2 hrs. Remove wax paper, cut dough into 1/4 " slices. Arrange on ungreased baking sheets. Bake @ 375 degrees for 8-10 min. Cool on wire rack Makes 4 1/2 doz.
