Aloha Chicken Kebabs Serves 4 1 c whole wheat breadcrumbs 1/4 c flaxseed meal 1/2 c sweet potato puree 1/4 c pineapple puree 1 T soy sauce 1 egg white, lightly beaten 1/4 c shredded unsweetened coconut 1 lb boneless skinless chicken breasts cut in strips, or chicken tenders 1/4 t salt 2 T flour nonstick cooking spray 1 T olive oil 10-12 wooden skewers In a bowl, mix the breadcrumbs with the flaxseed meal. Set aside. In a second, wide shallow bowl, combine purees, soy sauce, egg white, coconut, and mix. Thread chicken lengthwise onto skewers, using one skewer per chicken finger. Sprinkle both sides with salt and flour. Dip into egg mixture then roll in the breadcrumbs. Coat a large nonstick skillet with cooking spray and set it on medium high heat. Add oil when the pan is hot. Add chicken in a single layer and brown for 3-4 minutes on one side, until breadcrumbs turn golden and crisp. Turn and cook 4-5 minutes longer (turn down heat if necessary-I think mine had to be on medium the whole time). I made these and ate them with some pineapple jam for dipping-just mixed the tiniest bit of soy sauce with the pineapple jam and it was delicious! There are lots of diping sauces you could make to go with this. |
