Chocolate Pudding

This one is my favorite from the cookbook so far.

Chocolate Pudding Serves 8 - 10

1/4 c trans fat free soft tub margarine
1 cup avocado puree (dont cook it first, just puree itwith a tiny bit of water in your food processor)

1 cup confectioners' sugar
1/2 cup unsweetened cocoa powder
1 t vanilla
1/4 cup cornstarch

In a medium saucepan, melt the margarine over low heat. Stir in the avocado puree, sugar, cocoa, and vanilla. Cook, mashing well with a silicone spatula to smooth out any lumps of avocado until the mixture thickens, 3 - 4 minutes. Off the heat, gradually stir in the cornstarch. Serve warm.

Eat it all the night you make it too. It is really excellent!
