Posted on the TOH SS Dieting Link by bakingballerina Coffee Cake (with butternut squash) Serves 10 {I was thinking of trying this one tonight} BATTER nonstick coooking spray 1 cup brown sugar 4 T trans fat free soft tub margarine spread 1 1/4 c lowfat milk or buttermilk 1 c reduced fat sour cream 1 egg 2 t vanilla 2 c whole wheat flour 2t baking powder 1/2 t cinnamon 1/2 t salt 1 cup butternut squash puree 1/2 c mini marshmallows TOPPING 1/2 c chopped pecans or walnuts 1/4 c brown sugar 2 t cinnamon Preheat oven to 350. Coat a 9 inch cake pan or 8 x 8 inch pan with cooking spray. In a large mixing bowl or the bowl of an electric mixer, beat the sugar and margarine until creamy. Beat in 1 c of the buttermilk or milk, sour cream, egg, and vanilla. Add the flour, baking powder , cinnamon and salt and mix until completely incorporated. Pour hal fot he batter into the pan and smooth the top. Spread the squash puree over teh batter and sprinkle with the marshmallows. Stir the remaining 1/4 cup milk into the rest of teh batter and spread evenly over the squash filling. Mix together the topping ingredients and sprinkle evenly over the batter. Bake until a toothpick comes out clean, 55 - 60 minutes. let cool 5 minutes on a rack before cutting into wedges or squares. |
