Lemony-Lime Hummus
Combine the following ingredients in a food processor (I used a blender, and it worked ok...just needed a bit more time and patience :) )..after processing, if the hummus is too thick, add water and blend until it reaches the desired consistency:
2 cans garbanzo beans
1 clove garlic
1/4 cup olive oil
1 lemon and 1 lime, zest and juiced
1 t. each coriander, cumin, and chili powder
1 T. apple cider vinegar
2 T. tahini (roasted flavor if possible)
Pepper and salt to taste
Water as necessary
Serve with chips, or toasted pita or sourdough bread....YMMY!!!
