TRAIL COOK's CHILI CON CARNE

This is a A$$ Kicken Chili. Gtreat for the Super Bowl, Tail gate or atopping on Tamales, Hot dogs or hambergers

CHILI CON CARNE
Recipe By Trail Cook :

Amount Ingredient

2 tblsps Olive Oil
2 med Onions -- chopped fine
2 Clove Garlic -- crushed
1 pound Beef -- cubed or course ground
8 oz Pork -- Cubed or course ground
28 oz Tomatoes -- Crumbled, canned
1 Bay Leaf -- crushed
1 tsp Cumin -- ground
1 tsp Oregano
3 tblsps chili powder
2 jalapeno -- Canned/ chopped
1 cup Beef Stock
14 oz Beans, Kidney or Pinto
Salt & Pepper to taste

Cube (1/4 inch cubes) or course grind beef anmd pork. Season with sal;t
and pepper. Brown in skillet.
Heat oil in large, cast iron skillet. Add onions and garlic, fry until
soft, donot brown. Stir in meat and mix well.
Transfer meat mixture to a large pot. (cast iron best) Stir in remaining
ingredients, bring to a boil. Reduce heat to low and simmer for about one
hour or longer.

Serve with grated cheese, chopped onions and chopped jalapenos

CAUTION: This chili can be very hot. Add Jalapenos a little at a time and
season to taste

In the original recipe for six, the jalapeno quantity
produced a moderately spicy hot chili that would be cceptable to
all but the faint of heart
