Christmas Cinnamon Stars

A final (for now) recipe from the old cookbook that I picked up at the Flea Market last weekend.

As always, I would really love to hear from anybody that tries one of the recipes from my blog! Please let me know what you think!

Christmas Cinnamon Stars



Lightly grease two cookie sheets.


Grate and set aside

2 cups (about 2/3 pound) unblanched almonds (about 3 1/2 cups, grated)


Beat until stiff, not dry, peaks are formed

3 egg whites


Add gradually, beating constantly

1 cup confectioners’ sugar


Continue beating for 5 minutes with an electric beater on medium speed. Blend in

1 teaspoon grated lemon peel

3/4 teaspoon cinnamon


Set aside 1/2 cup of meringue for icing.


Fold almonds into remaining meringue mixture. Gently pat or roll out 3/8 inch thick on pastry canvas sprinkled with granulated sugar. Lightly sprinkle the top of the dough with more sugar. Cut out stars with a 2- to 2 1/2- inch star-shaped cookie cutter dipped in confectioners’ sugar. Carefully place stars on cookie sheets. Drop 1/2 teaspoon of the reserved meringue onto each cookie, drawing meringue out onto each point of the star.


Bake at 350 degrees F for 15 to 18 minutes.


Immediately remove cookies from cookie sheets to cooling racks..
