Candied Citrus Peel ( These recipes are from Peg ~ nanapeg) With sharp knife or veg. peeler (the palm held kind works really well) cut only the colored part of the rind into strips. Put into saucepan and completely cover with cold water.Bring to a boil and simmer for 5 minutes. Remove peels and add 1 cup of sugar for each cup of water in pot.Put peels back in. Bring to boil and simmer until peels are completely translucent - stir occasionally. This usually takes about an hour. Remove the peels and cool on a foil lined baking sheet. When cool shake in fine sugar and lay on a rack to dry completely. These can just be eaten and are great chopped and added to baked goods. Do not discard any remaining liquid.It's wonderful used in baking or for sweetening drinks. |
